
Last night we had Make Ahead Manicotti, Texas Toast and Butterfinger Cake for Dessert! I really like the Make Ahead idea for the Manicotti, you make it the night before and it's ready for dinner. So easy!
Make Ahead Manicotti
1 Pint of Ricotta Cheese
2 eggs
1 cup of shredded Mozzarella Cheese
1/2 cup of fresh grated Parmesan Cheese
1 1/2 Tablespoon of white sugar
1/8 teaspoon of salt
1/4 teaspoon of black pepper
Manicotti shells
2 jars of Spaghetti Sauce
Mix together the Ricotta Cheese and eggs and blend
Stir in the Mozzarella Cheese, 1/4 Cup of the Parmesan Cheese, sugar, salt and pepper.
Stuff mixture into UNcooked pasta shells.
Spread some of the spaghetti sauce inthe bottom of a baking dish. Arrange stuffed shells in a single layer over the sauce. Pour remainder of sauce over the shells.Cover the dish with foil and refrigerate overnight.
Bake covered at 400 degrees for 40 minutes. Sprinkle the remainder of the Parmesan Cheese (or more....) and bake another 15 minutes.
