I found this recipe in the Better Homes and Gardens Cookbook. It made about 2 dozen Cinnamon Rolls, and what you don't eat freeze well.
Cinnamon Rolls
4 - 4 1/2 cups of flour
1 package active dry yeast
1 cup milk
1/3 cup sugar
1/3 cup butter
1/2 tsp salt
2 eggs
1/2 cup sugar
2 tsp ground cinnamon
1 recipe Powdered Sugar Icing (at the bottom of this post)
In large bowl, combine 2 cups of the flour and the package of yeast.In a medium saucepan, heat and stir milk, the 1/3 cup butter and salt until almost warm (120 degrees - 130 degrees) and butter almost melts. Add milk mixture to dry ingredients along with the eggs. Beat for about 3 minutes. With a wooden spoon, stir in the remaining flour.
Turn dough onto a floured surface and knead for about3 - 5 minutes. Shape dough into a ball, place in a greased bowl, cover and let rise in a warm place for about an hour. Dough should double in size.
Punch dough down and divide in half. Cover and let rest for 10 minutes. In the meantime, grease two 9 x 1 1/2 inch round baking pans.
Roll each portion of the dough into a 12 x 8 inch rectangle. Brush the melted 3 tablespoons of butter over dough. Combine the cinnamon and sugar and sprinkle over the dough. Roll up - jelly roll style - starting from the long side.
Slice each roll into 12 pieces and place in prepared pans. Cover and let rise in warm place for 30 minutes.
At this point, you can cover with saran wrap and refrigerate for 2 - 24 hours (for make ahead) or cook immediately....
Bake in oven at 375 degrees for 20 - 25 minutes. Cool slightly and remove from pans. Drizzle with Powdered Sugar Icing. Serve warm.
Powdered Sugar Icing
Combine 1 cup of Powdered Sugar, 1/4 teaspoon vanilla and 1 tablespoon of milk or orange juice.
